Microgreen Arugula Pear and Strawberry Salad




Arugula microgreens (quantity as desired)

1 sliced pear (ajou, bartlet or other)

3-4 sliced strawberries

1 sliced Lebanese cucumber 

¼ cup diced red onion 

¼ cup goat cheese 

1-2 tbsp sunflower seeds

Optional: ¼ sliced avocado, carb or protein of choice 



3 tbsp olive oil 

3 tbsp tahini

1-2 tsp lemon juice 

1 tsp honey

½ tsp dijon mustard

¼ tsp each salt and pepper

Optional: minced garlic



  1. In a small bowl, whisk together vinaigrette ingredients: olive oil, tahini, lemon juice, dijon mustard, salt, pepper and honey. Add water as needed if it gets too thick. 
  2. In a medium bowl, arrange the microgreens, pear, strawberries, cucumber and red onions. Drizzle with the vinaigrette and gently toss. Crumble goat cheese. Sprinkle with sunflower seeds.
  3. Enjoy!
