What is freeze drying?
Freeze drying is a low temperature dehydration process. This involves freezing the product and lowering pressure, removing the ice by sublimation. This is in contrast to dehydration by most conventional methods that evaporate water using heat. The process also helps to keep the colour and flavour of the microgreens, giving a more appealing end-result than dehydration.
Vitamins, minerals, phytonutrients and other important nutrients found in microgreens can be easily damaged by heat. Freeze drying fruits and vegetables retains their freshness, nutritional quality, taste, shape, and size all without refrigeration! Around 98% of total nutrients are preserved. The greens will have a shelf life of 25 years if kept in their original unopened packaging.
Keep the bags in a cool and dry location away from sunlight. There is no need to refrigerate the bag. Unopened, the package will last up to 25 years. Once opened, if resealed in original packaging, the product will last up to 1 year.
