On top of all the typical microgreen benefits the unique protein content of peas makes them an excellent food choice for those who do not eat animal products. By weight, pea microgreens are one of the best vegetable sources of protein. Per 100 grams you'll get around 2 grams of protein; that's equivalent to a third of an egg.
