Ingredients
Salad
Arugula microgreens (quantity as desired)
Radish microgreens (quantity as desired)
½ navel orange
¼ avocado, sliced
¼ cup sliced green onions
¼ cup feta cheese
2 tbsp each sunflower seeds and pumpkin seeds
Optional: carb of choice (noodles, quinoa, or other), protein of choice, sesame seeds
Vinaigrette
3 tbsp soy sauce
3 tbsp sesame oil or olive oil
1 tsp rice wine vinegar
1-2 tsp lime juice (or lemon juice)
½ inch ginger piece, zested
1 clove minced garlic
¼ tsp each salt and pepper
Instructions
- In a small bowl, whisk together vinaigrette ingredients: soy sauce, sesame or olive oil, rice wine vinegar, lime juice, zested ginger, minced garlic, salt, and pepper.
- In a medium bowl, combine together the microgreens, orange, avocado, green onions. Drizzle with the vinaigrette and gently toss. Sprinkle with sunflower seeds and pumpkin seeds. Crumble feta cheese.
