Ingredients
Salad
Arugula microgreens (quantity as desired)
Radish microgreens (quantity as desired)
¼ avocado, sliced
1 Lebanese cucumber - sliced
¼ diced red onion
½ sliced mango
¼ cup feta or goat cheese
Optional: ¼ cup chopped walnuts, protein of choice
Vinaigrette
3 tbsp balsamic vinegar
3 tbsp olive oil
½ tsp honey
½ tsp dijon mustard
1 clove garlic, minced
A pinch of salt
Instructions
- In a small bowl, whisk together vinaigrette ingredients: the olive oil, balsamic vinegar, garlic, dijon mustard, salt, and honey.
- In a large bowl, arrange the microgreens, avocado, cucumber, feta (or goat) cheese, red onions, and mango. Drizzle with the vinaigrette and gently toss. Sprinkle with walnuts.
